Express Lunch: Courgette and Heirloom Tomato Salad

It’s packing up day! I am between making cups of tea, adding ice to jugs of water and wishing I was more prepared for the day (why did we decide to have a ‘Bon-Voyage’ Soiree the day before the packers arrive?!). By 2pm I was wondering why I have lost the will to live and realised it’s because I have not eaten yet. I don’t really have time to eat but luckily I had some fridge essentials ready. This dish does not really need a recipe and you can play about on how pretty you would like the dish to look. Normally, I would make my own pesto as I love the earthiness of homemade pesto, but today freshly bought had to do the trick.
