Chocolate Chip Brown Sugar Cookies

A day of fishing and foraging on the chilly Swedish river banks calls for a well deserved sweet snack.

Makes about 10 large cookies


  • 300g plain flour sifted
  • 1 tspn bicarbonate of soda
  • 200g brown sugar
  • 150ml unsalted butter – melted (I usually melt an extra 50ml just in case I need more)
  • 1 egg lightly beaten
  • 85g chocolate chips

Line two large baking trays with baking paper


  1. Preheat the oven at 180c
  2. Place the flour, bicarb and sugar in a large bowl and combine
  3. Add the butter (melted and now at room temperature) and egg and mix well to combine
  4. Add the chocolate chips
  5. Roll about 50g of mixture into balls and place in batches on the baking trays, allowing room to spread, and press slightly to flatten
  6. Bake for 10-12 minutes or until golden
  7. Set aside to cool slightly before placing on a wire rack to cool completely
  8. Repeat with remaining cookies
