Together with Escape-Explore we hosted our first Pop-Up Event, The Foraging Table yesterday. We decided on a beach setting for the lovely crew of Ellerman House where the lovely James will be taking them out Stand Up Paddle Boarding (SUP) and I was hoping to offer them some seasonal Cape Town best in a relaxed and elegant setting. The Foraging Table was created to celebrate the best of what Cape Town has to offer. Fresh, seasonal food made with locally sourced ingredients and served in unique settings.
Arriving ‘dou voor dag’ it was easy to see that the day was going to be absolutely glorious, the sea was dead calm and there was just a hint of cool air about. After an early morning hike up Lions Head, the team from Ellerman House arrived. After a session of stand up paddling out on the mirror calm sea I was ready to treat the team to some plates of food while they relaxed on scattered pillows on the warm sand.
I like ingredients to tell a story and therefore along with my wonderful ingredients of Harvest of Hope and Wild Organics I was hoping to create some inspiring dishes. Being a morning event I was looking to create a menu that was refreshing, light and zesty.
Layers of tropical delights with my homemade ‘Pina Colada’ Granola, Yogurt, Grenadillas from my mom’s garden, diced supersweet Pineapple and topped with some homemade Banana Bread Crumb.
Three Onion and Goats Cheese Tartlets with Slow-Roasted Cherry Tomatoes, Grilled Peppers, Pea Shoots and Lemon Oil.
Sous-Vide Kingklip with Lime and Cucumber Soup topped with a fresh Mange-Tout, Courgette and Granny Smith Apple Salad.
Clementine (Naartjie) and Almond Cake with Zesty Creme-Fraiche and a Clementine and Lime Syrup.
