5-Minute Spinach with Lemon & Garlic
'Get your greens in'! A quick and easy side that only takes 5 minutes to make but is full of flavour!
Ingredients
- 400 g spinach
- 4 tablespoons extra-virgin olive oil
- 2 garlic cloves minced
- 1 lemon juiced to taste
- 1/4 teaspoon chilli flakes opt
- pecorino cheese to serve opt - leave out if vegan
Instructions
- Heat the oil in a large non-stick frying pan on a medium heat, add the spinach (it will look too much, don't worry!) and season with salt and pepper. With tongs, swirl the spinach around to move the wilted spinach at the bottom of the pan towards the top.
- The spinach volume will drop down as it starts to wilt and soften, add the garlic, squeeze of lemon and the chilli flakes if using.
- The idea is to let the water evaporate so you might need to adjust the heat.
- When you are ready to serve, serve the spinach straight from the pan or transfer with tongs to a plate (leaving residue water behind). Depending on what I serve my spinach with I like to grate some pecorino over the spinach, another squeeze of lemon and definitely a drizzle of olive oil. Enjoy!
