
Baked Feta in Filo with Orange Blossom Honey

Wonderfully salty, crunchy and sweet, this is the perfect side or snack.
I love how something so quick and easy can turn out to be something quite exquisite. Simply wrap the feta, bake and drizzle liberally with the orange blossom honey.
A note on feta:
I would encourage you to use a top quality feta here, I used a goats cheese and milk feta. I love the feta from Dalewood Fromage in Franschoek.

Serves 4 as a snack (a little goes a long way).
Serving Suggestion:
I love this with a simple side salad or spread on some freshly toasted bruschetta with sweet halved cherry tomatoes.
Ingredients:
- 3 tablespoons melted butter or olive oil
- 200g (one block) feta cheese
- 1 large filo pastry sheets
- few sprigs thyme, leaves picked
- 3 to 4 tablespoons good local raw honey
- 1/2 teaspoon orange blossom water (optional)
- few twists black pepper
- 1 tablespoons sesame seeds
Method:
- Preheat the oven to 180c.
- Spread open the large filo sheet, with the fold in the middle, spread one side the melted butter and sprinkle over the thyme leaves, fold in half in to form a rectangle.
- Place the feta at end of a rectangle and wrap the filo around the feta, brushing with butter as you go to make it stick. Don’t wrap the feta too tightly, its better to leaves some room incase the feta to expands.
- Brush the outside pastry with melted butter and sprinkle with the sesame seeds.
- Bake for 25 minutes or until the pastry is golden.
- Meanwhile mix the honey, pepper and orange blossom water together.
- Remove the feta from the oven and carefully place on a pretty plate, drizzle generously with the honey and serve while the feta is still hot and oozing. Enjoy!
