
Garlicky Tahini Dressing

Creamy versatile tahini sauce, I love it!
The better the tahini the better the sauce so do try to source the most authentic tahini you can find.
In Cape Town I think the one from Sababa Deli is the best ( buy this on a Saturday at the Oranjezicht Market in granger bay).
Serving Suggestion:
So good over roasted vegetables, crispy salads, jacket sweet potato and roasted baby smashed potatoes.
What you'll need:
a blender (you can mix by hand)
Ingredients:
- juice of 1 lemon
- 1/2 cup tahini
- 2 small garlic cloves
- salt & pepper
- 1/4 cup + 3 tablespoons water
Method:
- Blend the lemon, tahini, garlic, 2 pinches salt and 1/4 cup water together (I think the Nutribullet is excellent for small amount of dressings). Add more water if the dressing is too thick. Season with salt and more lemon juice is if needed.
- Keep in the fridge for 1 week.
