Mexican Scrambled Eggs

I am all about high-fibre and protein meals and this delicious bowl is perfect when you need all the nutrients but you are short on time.

Mexican Scrambled Eggs

Ingredients
  

  • 2 organic eggs
  • 1/2 cup cottage cheese
  • 1 cup spinach/chard finely chopped
  • 5 spring onions finely chopped
  • 1/2 red pepper finely chopped
  • 1/2 cup cherry tomatoes halved
  • 1 chilli finely chopped (opt)
  • 1 garlic clove minced
  • pinch Spanish smoked sweet paprika
  • 1/4 avo to serve
  • 1/2 cup lentils or black beans

Instructions
 

  • In a small bowl whisk the eggs together with the cottage cheese until well incorporated, season generously with salt and pepper - set aside
  • In a non-stick frying pan, drizzle olive oil, add the spinach, tomatoes, chilli (if using) and garlic. Add most of the spring onions and red pepper to the pan, reserving some for garnish. Season with salt and a pinch or two of paprika, fry gently until the spinach is wilted and the tomatoes soft.
  • While the veggies are frying, in your serving bowl, mash the avo and top with the remaining red peppers and spring onions. I like to season my avo with salt, paprika, pepper and a drizzle of hemp seed oil. Add the beans next to the avo.
  • When the veggies are soft, add the egg mixture and scramble to your liking.
  • Add the scramble eggs to the bowl with the avo, give a final drizzle of olive oil and enjoy! Serve with a flaxseed cracker if you wish .
