My Everyday Veggie Slaw

Prep Time 20 minutes
Diet Fibre Rich Starter, Gluten-free, High-fibre, Vegan
Servings 6 portions


  • Mandolin optional


  • 3 cups green cabbage finely sliced
  • 3 cups red cabbage finely sliced
  • 1 cup kale, white rind removed, leaves shredded
  • 1 large beetroot finely sliced, then cut into matchsticks
  • 1 large carrot finely sliced, then cut into matchsticks
  • 3 radishes finely sliced
  • Handful dill fonds picked
  • Handful mint leaves shredded
  • Handful coriander leaves only


  • Add the ingredients together, chopping and changing with what you have in your fridge.
  • Store in the fridge ready for you to enjoy!
