No-Mayo Fresh & Tasty Coleslaw

I can’t add much to the caption really, its quick, its simple, its wholesome, colourful and damn delicious. 

In order to keep our gut healthy, we need to feed our gut with a rainbow of colourful and healthy food.

According to new research, the aim is to add at least 30 different type of plants to your diet every week, don’t panic this number includes grains, seeds and nuts too. 

This salad is the type of rainbow food your body craves. I love the fact that I can make it well in advance and munch my way through it during the week. 

Cabbage is so good for us, its part of the cruciferous veggie family, really important in detoxifying the body. There are numerous studies examining the important role cabbage in cancer prevention and treatment.  The uniqueness of cabbage in cancer prevention is due to the three different types of nutrient richness found in this widely enjoyed food – antioxidant richness, anti-inflammatory richness, and richness in glucosinolates.

The salad adds a freshness to anything and I add it to salads, mains, sandwiches or I even eat it as a snack with some jammy eggs. You get it, its versatile! 

A mandolin will really make your life easy here, yes its dangerous to use (mind those fingers!) but it really speeds up food prepping, just buy a protective glove as well and pinky promise to yourself that you will never use it without the glove (I did).  Its an inexpensive kitchen tool and I like this one.

What you'll need:

A mandolin! or a very sharp knife.


  • 160g red cabbage, mandolin or shredded very finely
  • 200g green cabbage, mandolin or shredded very finely
  • 2 small granny smith apples, cut into matchsticks
  • 1 small red onion, peeled, mandolin or finely sliced
  • 4 sprig mint leaves, finely chopped, about 3 tablespoons
  • 4 sprigs dill leaves, finely chopped
  • 3 tablespoons toasted pumpkin seeds (opt)


  • 1 lime, zest and juiced
  • 2 tablespoons olive oil
  • 1 tablespoons apple cider vinegar
  • 1/4 teaspoon salt


  1. Mix the salad ingredients together, mix the dressing ingredients together and taste and season according to taste. How acidic you want your slaw is quite personal so do add more lime juice if you want to zip it up. Enjoy!
