Radish & Sugar Snap Pea Salad

A true celebration of simplicity.

A refreshing and crunchy salad of peppery radishes, lemon dressing and the sweetness of snow peas.

Got my hands on some lovely organic radishes and snow peas from Meuse Farm where farmer Iming grows speciality vegetables for their taste. I love her weekly organic boxes!

I added shavings of hard shavings of goats cheese which makes a lovely addition.

Seasonal Swaps: You can use mange tout instead of snow peas.

Serves 4

What you'll need:

  • bunch radishes, sliced as thinly as possible (a mandolin works best)
  • 100g sugar snap peas
  • juice of 1/2 lemon
  • 3 tablespoons olive oil
  • 15g mint leaves rolled to a cylinder & sliced into ribbons
  • handful salad leaves, torn to bite sizes
  • salt & pepper
  • pea shoots (to garnish)

Ingredients:

  1. Place the radishes in a bowl with the sugar snap peas, lemon juice and olive oil. Add the mint leaves, reserving some for garnish.
  2. Add the salad leaves and pea shoots if using. Season with salt & pepper and use your hands to tumble the ingredients together. Taste and season with salt, pepper or lemon if needed adding the goats cheese shavings. Serve immediately.
