
Speedy Rocket Salad
Lets chat about fiber, fiber is a type of carbohydrate that your body can’t digest. So, instead of being broken down into sugar like other carbohydrates, it passes through your body.
Its essential that we get enough fiber into our bodies but the reality is we are not getting enough.
One easy way to get more fiber into your body is to add more (lots more) vegetables to your daily eating routine.

By adding fiber to the start of any meal you are essentially creating a ‘mesh’ in our intestines which slows down and reduces the absorption of food molecules including calories and reduces any glucose spikes we might have.
What really works for me is adding (in addition) a green starter to anything I am going to eat. Basically like a side salad or dish even if my main meal is plant based.
The beauty of the salad is, it takes 5 minutes to make and you can make it ahead to eat another portion later in the day, just layer the dressing first with the ingredients on top without mixing the salad.
Hemp seeds are great as a salad topping and a protein source with 3 tablespoons of hemp seeds will provide over 9g of protein and they are also a good source of healthy fats.
I like my salads to be really acidic, if you are not so keen on sharp flavours tone down the lemon and Dijon mustard.
I would eat the assembled salad on the day its made.

Speedy Rocket Salad
Ingredients
- 3 cups rocket leaves
- 3 spring onions finely chopped
- 1/2 ripe avo cubed
- 1 medium fennel bulb finely shaved (mandolin works best)
- 4 artichoke quarters roughly chopped
- 2 tablespoons hemp seeds
Dressing
- 3 tablespoons olive oil
- 1/2 or 1 teaspoon Dijon mustard
- 1/2 large lemon 1 lime, juiced
- pinch smoked chilli flakes optional
- 1 tablespoon chopped soft herbs I used tarragon
- Pinch salt & pepper
Instructions
- Add the dressing ingredients to your serving plate or bowl followed by the fennel, mix well to coat the fennel with the dressing, the acidity in the dressing will prevent the fennel from browning. Now add the avo, artichokes, spring onions and finally the rocket. Sprinkle over the hemp seeds and toss well if serving straight away or leave unmixed in the fridge for later. Enjoy!
