
Spicy Herb Dressing

Super versatile dressing which I make on repeat at home.
I absolutely love this dressing spooned over roasted veggies, lentils and salads.
The jar will keep up to a week in the fridge and can be frozen.
What you'll need:
A powerful food processor
Ingredients:
- juice of 1 lemon
- 1/2 cup good olive oil
- large handful coriander
- large handful parsley
- 1 tablespoon red wine vinegar
- 1 red chilli (any colour, check for hotness)
- 1 teaspoon cumin
- 1/2 teaspoon Spanish smoked paprika
- small garlic clove
- 1//2 teaspoon fine sea salt
Method:
- Whizz together ingredients until smooth, taste and adjust the seasoning to your taste. Store in the fridge.
