Super versatile dressing which I make on repeat at home.

I absolutely love this dressing spooned over roasted veggies, lentils and salads.

The jar will keep up to a week in the fridge and can be frozen.

WHAT YOU WILL NEED

A powerful food processor

INGREDIENTS
  • juice of 1 lemon
  • 1/2 cup good olive oil
  • large handful coriander
  • large handful parsley
  • 1 tablespoon red wine vinegar
  • 1 red chilli (any colour, check for hotness)
  • 1 teaspoon cumin
  • 1/2 teaspoon Spanish smoked paprika
  • small garlic clove
  • 1//2 teaspoon fine sea salt
METHOD
  1. Whizz together ingredients until smooth, taste and adjust the seasoning to your taste. Store in the fridge.
